Food Sustainability: The new global trend that protects the sustainability of the environment

The new trend that dominates the world in nutrition has to do with sustainability, which concerns the consumption of food in such a way as to protect the sustainability of the environment. Its basic principle is the redefining of the values ​​and habits of our everyday life for a green future. In essence, sustainability is a system that respects life in all its forms. The aim is to limit the environmental consequences of modern diet, such as the emission of greenhouse gases, the depletion of natural resources and the extensive use of chemicals that endanger human health and biodiversity.

Environment
By incorporating the principles of sustainability into the way we consume food, the benefit is multiple. At a first level, the effects on the natural environment of the way food is prepared, packaged, transported and handled are reduced. With less emissions, less waste and less energy consumption the planet can breathe freely again.

Economy
On a second level, nutritional sustainability favors the domestic economy, as its main pillar is the consumption of local and seasonal products. Along with the local economy, benefits may also exist in the household economy, since the basic principle of sustainable eating is no waste (that is, nothing goes to waste!). In addition, buying in bulk, loose, instead of packaged products is clearly more beneficial to the consumer's pocket.

Society
Regarding the third level and the social sector, sustainable nutrition is a nutritional approach that encourages the consumer to prefer foods whose production has the least possible impact on the environment. As a result, the consumption of animal products is limited and the options for unprocessed foods such as legumes, fruits, vegetables, nuts and seeds are increased. At the same time, it is emphasized that consumption must be done with conscience and moderation, with the result that habits such as overeating and wasting food are not accepted. Thus, the consumer is pushed to adopt a healthier, nutritious diet, with multiple benefits in the prevention of diseases such as diabetes, obesity and cardiovascular diseases.

In conclusion, the trend towards nutritional sustainability is considered necessary and vital for the planet, since in essence the sustainability of the environment will depend on our own behaviour, individual and collective.
